My favourite piece of ballet music? The Rose Adagio (appropriately enough) from The Sleeping Beauty- La Belle au Bois Dormant in French. This enchanting fizz from the romantic Anjou region is my choice for your 12th Pink of Christmas. Crémant de Loire is a terrific alternative to Champagne, produced by the same method. This organic example is based on subtle, nutty Cabernet Franc and available from With its redcurrant bite and brioche finish it would be a terrific choice with gammon or salmon on Christmas Eve.
